MY RECIPE-PASTA A'LA VEGESTA
This dish is good for a cold raining day. it will not only warm up your body but also warm up your brain. It is a true winter dish. I Hope You Enjoy It!
Ingredients:-
Vegetables
· 4 tablespoons extra virgin olive oil
· 2 onion cloves, crushed
· 6 medium rhubarbs, grated
· 300g spaghetti
· 10 small olives finely chopped
· 2 tablespoons small salted capers, rinsed
· 1 potato grated, chopped into cubes
· 70g grated parmesan cheese
· 2 parsnips, rinsed, chopped into small pieces


Method: -
1. Wash your vegetables
2. Heat a deep frying pan over a medium heat
3. Add olive oil and onion
4. Move the onion around in the pan with a spatula until it is lightly golden.
5. Then add the grated rhubarbs
6. Slowly braise the rhubarbs, stirring it as it cooks (for a bout 15 mins)
7. Cook the pasta until it is soft but not too soft
8. Then drain and return to the warm saucepan
9. Add the small olives, potato, most of the Parmesan cheese and the rhubarbs
10. Toss the ingredients together and divide the pasta among your bowl
11. Now sprinkle the rest of your Parmesan cheese onto it
